Lardo is a type of salumi made by curing strips of fatback with rosemary and other herbs and spices. As they say in the culinary world, fat is flavor! Lardo is pork fat that has been cured with rosemary and other spices.

The most famous lardo is from the Tuscan town of Colonnata, where lardo has been made since Roman times. Colonnata-made lardo is one of the oldest food traditions in Italy, dating back to antiquity, and the same ancient methods of preparation are still in use to this day.

Use our Terra di Siena Lardo Colonnata Style to add rich flavor to any dish. Give potatoes an unctuous flavor by frying them in lardo fat, or saute them with spinach to make buttery greens. Serve shaved slices of lardo on a charcuterie board with fresh fruit, such as melon, or layered on crostini with your favorite cheese.
